Shinshu Junmai Ginjo Miyamanokaori Kanjikomimurokanamagenshu is a new-season (shinshu) winter-brewed, unfiltered (muroka), undiluted (genshu), unpasteurized (nama) junmai ginjo from Hikami Seishu in Okuizumo, Shimane. The kanjikomi (cold-season brewing) process allows slow, controlled fermentation in the frigid mountain climate, developing layered aromatics and rich flavor that are locked in by the absence of filtration and pasteurization. It is a raw, full-strength expression of Hikami's Miyamanokaori ginjo style at its most immediate and vibrant.
