Gowari Migaki (五割磨き) describes this Shinomine Junmai Ginjo polished to 50%, blending Gohyakumangoku and Ginpuu sake rices. From Chiyoshuzou's 1873-founded Nara brewery, the Ginpuu variety's floral contribution complements Gohyakumangoku's clean grain character, brewed with Katsuragi spring water by ex-winemaker Tetsuya Sakai.
