Description
Chokara (超辛) means super dry, and this Shinomine Yamada Nishiki Ichibigenshu delivers a boldly dry, undiluted Junmai from Chiyoshuzou in Nara. Using Yamada Nishiki polished to 60% with the Katsuragi mountain spring water, ex-winemaker Tetsuya Sakai crafts this genshu to a sharp, cutting dryness that makes it a compelling partner for rich cuisine.
