Shinomine Ise Nishiki Junmai Ichibigenshu uses a heritage Mie rice variety polished to 65%, released undiluted as first-run genshu from Chiyoshuzou in Gose City, Nara. This expression reflects the brewery's dedication to preserving regional sake rice diversity, crafted by ex-winemaker Tetsuya Sakai with the limestone spring water of Mount Katsuragi.
