Ise Nishiki is a heritage sake rice from Mie prefecture, and this Shinomine Junmai Muroka Namagenshu from Chiyoshuzou in Nara uses it polished to 65% as an unfiltered, unpasteurized, undiluted expression. Brewed with spring water from Mount Katsuragi under ex-winemaker Tetsuya Sakai's direction, this genshu reveals the ancient variety's rustic, grain-forward character.
