Shinomine Hattan Junmai Ginjo uses Hattan35, Hiroshima's premium-grade Hattan Nishiki, further polished to 50% for ginjo-grade brewing. Chiyoshuzou in Gose City, Nara pairs this richly aromatic variety with the soft, limestone-filtered spring water of Mount Katsuragi under the direction of ex-winemaker Tetsuya Sakai.
