Description

Shinomine's Yamada Nishiki Daiginjo uses the king of sake rice polished to 50% at Chiyoshuzou in Gose City, Nara, founded 1873. Toji Tetsuya Sakai's wine background shapes an approach that emphasizes balance and structure, drawing on the mineral-pure spring water of Mount Katsuragi to craft a daiginjo of depth, poise, and aging potential.
