Shinomine's Aiyama Junmai Muroka Namagenshu is an unfiltered, unpasteurized, undiluted sake made with Aiyama rice polished to 65%. Founded in 1873 under Mount Katsuragi in Nara, Chiyoshuzou draws on limestone-filtered spring water and toji Tetsuya Sakai's wine background to bring this rare Aiyama variety's rich, plum-like character into vivid focus.
