This autumn hiyaoroshi junmaishu is part of Kitanishi Sake Brewery's Shikinosake (Four Seasons Sake) seasonal series from Saitama. Hiyaoroshi sake is pasteurized once in spring, then stored through summer and released in autumn without a second pasteurization, resulting in a mellow, smooth texture. The seasonal timing allows the sake to develop a gentle richness that pairs well with autumn cuisine.
