Shikinosake is a second brand from Kitanishi Sake Brewery in Ageo, Saitama, the same house that produces Bunraku. Kitanishi Sake Brewery was founded in 1894 and uses medium-hard Chichibu water, and in 2020 the fifth-generation owner undertook an extensive renovation of the brewery and introduced new labels to complement the house's established lineup. Shikinosake extends the brewery's exploration of aroma, sweetness, and acidity across different seasonal expressions within the same production environment.
