Banshu (Hyogo)-grown Yamada Nishiki milled to 50% in a junmai ginjo from Shizuoka. Brewed with the Shizuoka NEW-5 yeast, it shows the soft, clean rice character typical of the region, with gentle acidity and a crisp, refreshing finish suited to food pairing.
