Tobin-tori (drip-drawn into individual bottles) junmai daiginjo genshu from Shizuoka, awarded the Chairman's Prize at the Shizuoka Seishu Kanshinkai and bottled in only 120 units per release. Soft acidity from Shizuoka yeast combines with a gentle, rice-derived sweetness and a clean, lingering finish.
