Brewed in Fujiedashi, Shizuoka, using ultra-soft groundwater from the Setogawa River at a hardness of just 3.4. This honjozo is made with the Shizuoka NEW-5 yeast, producing a gentle ginjo-like aroma alongside a light, clean palate with well-integrated umami, acidity, and a crisp finish.
