Shizukuzake daiginjo at 40% polishing, collected drop by drop from hanging cloth bags without any pressing pressure. The gentle extraction process preserves the most delicate aromatics of the high-polish Yamada Nishiki mash, yielding a refined, ethereally light sake with exceptional clarity.
