A limited specialty expression polished to 40%, produced in small batches at this approximately 400-year-old Harima brewery. The brewery ferments all sake using natural mountain spring water and traditional open-door temperature management rather than mechanical climate control, channeling the Seppiko mountain terroir into each pressing.
