Description
Daiginjo polished to 40% using selected Yamada Nishiki from the Harima region, fermented at low temperature with spring water flowing from the Seppiko mountain system. Natural temperature regulation through door management rather than mechanical equipment gives the sake transparency and a clean, dry character.
