Sanshoraku daiginjo from the Gokayama highland brewery in Toyama, brewed using soft melt water filtered through beech forests. Kanazawa yeast gives a restrained yet pleasant ginjo aroma, and the sake is designed to complement the bold mountain cuisine of the World Heritage region.
