Saka Homare rice, a variety developed over a decade by Fukui Prefecture specifically for premium sake brewing, is used in this daiginjo alongside the locally developed FK801 yeast and Hakusan-system spring water. Fukui Prefecture's oldest brewery, founded in 1716, brews entirely with locally sourced ingredients.
