Muroka (unfiltered) and nama (unpasteurized), this junmai is polished to 60 percent and bottled directly from the press at the Tatebayashi brewery founded in 1801. The approach preserves the raw, vivid flavor and natural carbonation of freshly pressed sake, brewed with water from the Akagi mountain range.
