Yamada Nishiki polished to 50% gives this Fukuoka junmai daiginjo a gentle aroma and a clean, lightly sweet umami. It is brewed using spring water from the Homan aquifer with low-temperature slow fermentation, applying hand-ladled koji and small-tank methods at a brewery founded in 1673.
