Ooga Shuzo, founded in 1673, is the oldest sake brewery in Fukuoka Prefecture, drawing on groundwater that flows from the sacred Mount Houman since the very beginning. The Ooga brand was relaunched in 2015 under a young head brewer focused entirely on 100% Yamada Nishiki rice, crafting sake with a subtle aroma, slightly dry profile, and refined rice umami using handcrafted methods including wooden steaming boxes and small-scale fermentation tanks.
