Description
Onikoroshi Shiboritatenamazake is a freshly pressed, unpasteurized sake from Oitashuzouten in Gifu, bottled immediately after pressing to capture the most vibrant stage of the brewing cycle. As a shiboritate, this sake is released early in the season with maximum freshness and a lively, sometimes slightly effervescent texture. The Onikoroshi lineage gives it a dry, assertive character that is enlivened by the raw, unfiltered qualities of namazake.
