Oita Shuzouten was established in 1720 in Hida Takayama, Gifu Prefecture, at the foot of the Hida Mountains, and is credited by many as the originator of the Onikoroshi name — a term meaning sake dry and potent enough to fell a demon. The brewery relocated in 1990 in pursuit of cleaner mountain water, and its Hida Jiman Onikoroshi has been brewed continuously for over three centuries as Takayama's defining dry sake.
