Okushimizu Seisen uses Menkoina polished to 70% from Takahashi Shuzoten in Akita. The seisen (pure spring) designation echoes the brewery's Misato Town spring water heritage; brewed entirely with Akita-grown rice, this sake emphasizes local terroir at an accessible polishing level.
