Description
Yamada Nishiki at 65% polish undergoes tobin-tori pressing, where the sake is collected in individual 18-liter tobins for precise quality control, then bottled without filtration as muroka genshu. This junmai from the Tochigi brewery reflects the understated, honest style built around Sase-shiki cloth pressing and restrained craftsmanship.

The concept of sake is "Sake -like sake" in the early Meiji era, and the first "Sugita Fusakichi" will be founded from Niigata Prefecture Chuetsu. In the first generation, he made his own sake brewing, and started making it with Izumi Nakamurakami (Nakamura Mizumi) for the wonderful water quality. The prepared water is groundwater.
