Gohyakumangoku at 55% polish is pressed using the tobin-tori method for this junmai ginjo genshu, collecting individual tobin lots to ensure quality selection. Bottled undiluted, the sake retains the clean, crisp lightness of Gohyakumangoku alongside the concentration gained from leaving it at natural strength.

The concept of sake is "Sake -like sake" in the early Meiji era, and the first "Sugita Fusakichi" will be founded from Niigata Prefecture Chuetsu.
