Shizukuhime rice polished to 70% anchors this sake from the Dogo area of Ehime, bottled under the Nikitatsu label, a name derived from an ancient Japanese placename for the region. Brewed using mountain-system spring water from Mt. Ishizuchi, it reflects a mild, approachable Ehime style.

It is the only liquor store in Dogo, and was founded in 1895, the following year when the Dogo Onsen Main Building was built, and grew up with Dogo Onsen Main Building for over a hundred years in the brand of Sake "Nikitatsu". It is the brewery that has been continuing.
