Honjozo crafted with Matsuyama Mii rice at 70% polish, drawing on water from the Nukuta spring that feeds the Dogo Onsen area. The Nikitatsu brand, whose name derives from a passage in the ancient Man'yoshu poetry anthology, reflects more than a century of brewing tradition at this Ehime distillery.

It is the only liquor store in Dogo, and was founded in 1895, the following year when the Dogo Onsen Main Building was built, and grew up with Dogo Onsen Main Building for over a hundred years in the brand of Sake "Nikitatsu". It is the brewery that has been continuing.
