Description

Murokanamagenshu Honjouzou from Inoue Shuzo in Tochigi is a honjozo sake bottled unfiltered, unpasteurized, and undiluted, presenting the sake at its most assertive and raw. The small addition of distilled alcohol characteristic of honjozo sharpens the aromatics and keeps the body lean, while the namagenshu treatment amplifies this with full concentration and the lively, uncooked freshness of an unpasteurized sake. Muroka treatment retains natural particulates for additional texture and depth.

Nagano
From ordinary sake to Daiginjo, we consistently make sake in the same process. Limited water absorption and small -crew, etc. are all the customer's "delicious", so the sake is put in the sake of the brewer.
