Murokabinhiire Tokubetsu Junmai Sanwarikouji from Inoue Shuzo uses a 30% koji rice proportion, a more moderate level than the brewery's 50%-koji variants, resulting in a cleaner fermentation with less dominant enzyme-derived richness and a more refined balance between sweetness and umami. The muroka unfiltered designation preserves the sake's natural body, while binhiire bottle pasteurization gently sets the flavor profile. This expression occupies a middle ground between the brewery's standard and high-koji tokubetsu junmai offerings.
