Murokabinhiire Junmai Ginjo from Inoue Shuzo in Tochigi is a junmai ginjo retained in its unfiltered state and pasteurized once within the sealed bottle, preserving the delicate floral and fruity aromatics that define the ginjo category. Rice polished to at least 60% and low-temperature fermentation contribute to the sake's lifted, fragrant character, while muroka treatment adds a soft textural richness. Binhiire bottle pasteurization gently stabilizes the sake while maintaining the vibrancy of the unfiltered expression.
