Murokabinhiire Honjouzou from Inoue Shuzo in Tochigi pairs the honjozo category's characteristic lightness and aromatic lift, achieved through a modest addition of distilled alcohol, with muroka unfiltered richness and the gentle stabilization of bottle pasteurization. Binhiire, in which the sealed bottles are heated rather than the sake in bulk, is considered a gentler approach that better preserves the sake's freshness. The result is a clean, food-friendly honjozo with slightly more body and textural presence than a standard filtered expression.
