Mikotsuru Daiginjo Juunen Jukusei is a long-term aged (10-year maturation) daiginjo from Suwa Mikotsuru Shuzojo in Nagano, where extended cellar aging transforms the fresh aromatics of daiginjo into deeper, complex amber notes with hints of umami and dried fruit. The brewery's precise temperature control and high-altitude Suwa environment provide ideal conditions for slow, nuanced sake aging.
