Mikotsuru Sakemirai Junmai Ginjo is brewed at Suwa Mikotsuru Shuzojo in Shimosuwa, Nagano, using Sakemirai, a sake rice variety developed in Nagano prefecture and released around 2015 to suit the cool alpine climate. Ginjo polishing of at least 60% and the brewery's strict temperature-controlled fermentation produce a clean, aromatic profile. Nagano's cold winters and soft mountain water contribute to the delicate, approachable character of this expression.
