Tobinkakoi (斗瓶囲い) refers to the practice of collecting only the finest free-run drops from bag-pressed sake into small vessels for separate aging. Made from Tokku-A district Yamada Nishiki polished to 40%, this junmai daiginjo delivers an elegant, silky texture with pristine rice umami.
