Oosawa Shuzo is situated in Saku City, a sake-brewing heartland in Nagano Prefecture where thirteen breweries draw on mountain-stream water flowing from the Southern Alps and the Yatsugatake volcanic range. The Meikyoushisui brand name, a classical Chinese phrase meaning 'a clear mirror and still water,' expresses the brewery's aesthetic ideal of utter transparency and calm in a cup. Saku's high-altitude cool temperatures and abundant soft snowmelt water are particularly well-suited to slow, long-fermentation daiginjo-grade brewing. This Daiginjo represents the pinnacle of the brewery's standard lineup, polished to at least 50%, embodying the refined, clean-edged style that has made Nagano daiginjos a benchmark for the category.
