Matsunotsukasa Tokubetsu Junmaishu exceeds the standard junmai specification through either a higher polishing ratio or exceptional technique, placing it above the base junmaishu in the Matsuse Shuzo lineup from Ryuo Town, Shiga. The tokubetsu designation signals increased refinement, and the pure-rice brewing without added alcohol allows the natural umami and texture of contract-grown rice to take full precedence. Soft underground water from below the Aichi River alluvial basin contributes a clean, smooth mouthfeel that complements the sake's straightforward yet elevated character.
