Matsunotsukasa Ubusuna, meaning 'guardian deity of one's birthplace,' is a junmai sake from Matsuse Shuzo in Ryuo Town, Shiga, brewed as a tribute to the land and community that sustains the brewery, using contract-grown rice selected for quality that falls outside strict competition grading standards but still expresses exceptional character. Polished to 65 percent and fermented without added alcohol, it delivers a smooth, food-compatible sake with natural umami and a round body that scales gracefully from chilled to warm serving temperatures. The name reflects the brewery's gratitude to its home region and its agricultural partners.
