Description

Matsunotsukasa Junmai Ginjo Azolla uses pesticide-free and chemical fertilizer-free Yamada Nishiki grown in Ryuo Town, Shiga, where the aquatic plant azolla is cultivated in paddies to suppress weeds naturally without agrochemicals. Matsuse Shuzo ferments this organically grown rice with their house kimoto-method yeast starter, capturing the dynamic vitality of natural fermentation in a junmai ginjo polished to 50 percent. Winner of third place in the Modern Natural category at SAKE COMPETITION 2025 and the JAL Flying Sake Award, this sake expresses ecological farming values through a clean, aromatic, and subtly complex profile.
