Matsunotsukasa Junmai Ginjo Arabasiri captures the first, most vigorous flow of sake when the press opens, a turbulent and slightly cloudy fraction called arabasiri, or rough run, that carries an intense, exuberant freshness and vivid flavor. Matsuse Shuzo in Ryuo Town, Shiga, applies this single-fraction bottling to junmai ginjo-grade rice, bottling the arabasiri directly without further blending or adjustment to preserve its bold, unrestrained character. The result is a sake with more assertive flavor, a natural mild cloudiness, and the youthful intensity associated with the very start of the pressing cycle.
