Matsunotsukasa Junmai Ginjo is the core pure-rice ginjo expression from Matsuse Shuzo, a brewery founded in 1860 in Ryuo Town, Shiga, and a foundational pillar of the brewery's lineup that has established the house style for balanced, food-friendly sake. Contract-grown rice milled to ginjo standards and fermented at low temperature with the brewery's proprietary yeast produces a clean, moderately aromatic profile with soft floral notes and natural rice umami. Shiga's soft, mineral-light water from deep below the Suzuka mountain range underpins the smooth, rounded finish.
