Matsunotsukasa Junmai Daiginjo Tousui, meaning 'intoxication' or 'enchantment,' is a premium pure-rice daiginjo from Matsuse Shuzo in Ryuo Town, Shiga, released as a hinjozo-grade sake with rice polished beyond 50 percent using contract-grown Yamada Nishiki. The name captures the sensory experience the brewery intends, with a refined floral fragrance, silky texture, and a lingering sweetness that deepens into clean, elegant umami. Tousui is positioned as one of the most prestigious expressions in the Matsunotsukasa lineup, reflecting the brewery's capability at its most ambitious.
