Description

Matsunotsukasa Junmai Daiginjo Shizukutobinkakoi uses the shizuku drip method combined with tobin-kakoi storage, where the gravity-dripped sake is preserved in individual 18-liter glass tobin jugs sealed against oxygen to maintain peak aromatic character until release. Matsuse Shuzo in Shiga's Ryuo Town applies this labor-intensive approach to their highest-grade pure-rice rice, polished beyond 50 percent, producing a sake of extraordinary delicacy and crystalline purity. The tobin preservation allows the sake to develop complexity while retaining the vivid, high-toned fragrance captured at pressing.
