Matsunotsukasa Junmai Daiginjo Azora, meaning 'blue sky,' is a pure-rice daiginjo from Matsuse Shuzo in Ryuo Town, Shiga, evoking openness, clarity, and the elevation of premium ginjo production through its sky-referencing name. Rice polished beyond 50 percent and fermented without added alcohol using the brewery's house yeast and soft Aichi River water produces a sake of exceptional transparency, with a high-toned floral fragrance and a clean, precisely structured body.
