Matsunotsukasa Junmai Daiginjo Azora

🍶
Description

Matsunotsukasa Junmai Daiginjo Azora, meaning 'blue sky,' is a pure-rice daiginjo from Matsuse Shuzo in Ryuo Town, Shiga, evoking openness, clarity, and the elevation of premium ginjo production through its sky-referencing name. Rice polished beyond 50 percent and fermented without added alcohol using the brewery's house yeast and soft Aichi River water produces a sake of exceptional transparency, with a high-toned floral fragrance and a clean, precisely structured body. The Azora label is positioned as an approachable entry point into Matsunotsukasa's daiginjo range.

Matsuse Sake Brewery

Shiga
I always want to be myself in the sake brewing of "Matsunoji". In order to be a "pine boss", it starts with local ingredients such as liquor rice grown locally and water that sucks from 120m underground. Thanks to the land of Ryuo -cho, we are carefully sake brewing so that you can feel the atmosphere of the warehouse and the spread of rural areas.
