Matsunotsukasa Jounetsu Junmai, meaning 'passion junmai,' is a pure-rice sake from Matsuse Shuzo in Ryuo Town, Shiga, that expresses the brewery's commitment to handcrafted sake from 100% contract-grown rice using the box-koji method and small-batch fermentation at controlled low temperatures. Without added distilled alcohol, the sake derives all its body and flavor from rice, water, yeast, and koji, delivering the natural umami and texture characteristic of the junmai style. The Jounetsu name reflects the dedication behind Matsuse Shuzo's approach to production.
