Matsunotsukasa Daiginjo Junmai Shizuku is collected using the shizuku method, where pressed moromi is hung in cloth bags and the sake drips out under gravity alone without any mechanical pressure, yielding only the purest, clearest fraction of each batch. Matsuse Shuzo in Ryuo Town, Shiga, applies this painstaking technique to daiginjo-grade rice polished beyond 50 percent, producing a sake of exceptional delicacy, refined floral character, and crystalline purity. The gravity-only extraction eliminates any harsh or coarse flavors that pressing might introduce, resulting in the brewery's most refined expression.
