Matsuse Shuzo in Ryuo Town, Shiga, applies this painstaking technique to daiginjo-grade rice polished beyond 50 percent, producing a sake of exceptional delicacy, refined floral character, and crystalline purity. The gravity-only extraction eliminates any harsh or coarse flavors that pressing might introduce, resulting in the brewery's most refined expression.
