Description

Matsunotsukasa Daiginjo Junmai Kuro is the black-label daiginjo from Matsuse Shuzo, a brewery founded in 1860 in Ryuo Town, Shiga, using 100% contract-grown Yamada Nishiki rice and the brewery's own house yeast to achieve a signature balance of elegant aroma and deep, rice-forward umami. Soft water drawn from 120 meters below the Aichi River alluvial plain supports a clean fermentation environment, and the daiginjo polishing level reveals a refined, floral aromatic profile over a smooth, layered body. The black label designates this as the top tier of the Junmai Kuro range.

Matsuse Sake Brewery

Shiga
I always want to be myself in the sake brewing of "Matsunoji". In order to be a "pine boss", it starts with local ingredients such as liquor rice grown locally and water that sucks from 120m underground. Thanks to the land of Ryuo -cho, we are carefully sake brewing so that you can feel the atmosphere of the warehouse and the spread of rural areas.
