Released in 2017 as a special limited expression, this Masterpiece bottling from Emishiki Shuzo represents the brewery's mastery of junmai craft in Koka, Shiga, where 100% locally sourced rice, traditional kimoto starters, and hand-pressing via funa-shibori define the house identity. With only three full-time staff, every detail is overseen directly by the fifth-generation toji in a production environment that prizes quality over volume.
