Mansakunohana Junmai Ginjo Ichidohiiregenshu Oyakomaijitate is a once-pasteurized, undiluted (genshu) junmai ginjo from Hinomaru Jozo in Yokote, Akita, brewed using a parent-and-child rice combination in which both the koji rice and the main fermentation rice are derived from the same rice variety. This oyako (parent-child) brewing approach creates a coherent, unified flavor profile, with deep rice character expressed throughout the aroma, palate, and finish. Akita Sake Komachi is the probable rice variety used in both roles, a reflection of the brewery's focus on Akita-grown ingredients.
