Daiginjo genshu made from Yamada Nishiki polished to 35%, submitted as a competition entry by the sole sake brewery within Kurashiki's UNESCO-recognized Bikan historic quarter. Bottled undiluted at full-concentration, it combines a pronounced ginjo bouquet with the weight of an uncut moromi.
